If the invoice was already sent or paid, deleting it rewrites history — a credit note corrects it while keeping the record honest. Save delete for drafts nobody has seen.
Crediting a stock item returns the quantity to inventory and adjusts its value in the same posting. Your shelf count and your balance sheet move together, automatically.
No — credit against a sale is capped at what that sale was worth, which protects you from accidental over-crediting. If you genuinely owe the customer more than that, record a refund for the difference separately.
